This week, Isabelle of Les Gourmandises d’Isa picked Arborio Rice Pudding. We could make chocolate, or vanilla, or both, and I chose vanilla because chocolate rice pudding is . . . just not right. It threatens the order of the culinary universe. Lesson learned: recipe does not work with almond milk, which I decided to experiment with because Master Chow has a mild milk allergy.
I knew I’d have problems getting it to set given the experiences of other TWD bakers, who made the pudding with whole milk. Needless to say, I did not take a picture of the odd-tasting “soup.” I’m going to try this again, and I will increase the amount of arborio rice up to about 1/2 a cup, and use a combo of almond milk and cream (which he can tolerate), and see how that works out. To see how others fared (and some of the flavor combos were wonderful), check out the TWD blogroll.
This was a public service announcement: Madam Chow, conducting failed mad experiments with rice pudding, so you don’t have to!
Update: some lactose intolerant folks are mentioning that heating milk seems to help. Thanks for the tip, but Master Chow is actually allergic to milk proteins, and is not lactose intolerant, so heating doesn’t help, but I’ll keep the tip in mind!

Love it! You didn’t have to take a picture, your words were enough for a good hardy laugh! I’m sure you’ll knock it on the head next time!
I am so sorry it failed.
Mine didn’t, but I didn’t like it.
I’m sorry it failed. I am lactose intolerant, but for some reason when the milk is heated or boiled, it doesn’t give me a stomach ache anymore. Maybe you could try it again with normal milk if you have time.
I am so sorry it didn’t work out! But I loved your public service announcement!
Thanks for the tip. I was going to try it with soy milk and switched to regular at the last minute (just in case).
See you next week for pie!
Not a rice pudding fan, so this one did not endear itself any…sounds like you are thinking it deserves another go around, however, so maybe you will enjoy it the second time around. What a drag to have a milk allergy…hope he doesn’t suffer much because of it…we drink a lot of milk around here, so we would all be very sad to have an allergy to it!
Success or failure, I’m giving you props for your experiment!!!
I’m lactose intolerant, and would have been jumping for joy if the almond milk worked. Oh well, I guess I’m stuck taking tons of lactaid in order to enjoy the rice pudding.
Linda
I’m sorry it didn’t work out for you.
I’m with Linda of Tender Crumb…lactose intolerant. I would have been so excited too if it worked out. THANK YOU for trying it out for us!! 🙂
aw, sorry your experiment failed. it was a great idea, though!
I’m sorry it didn’t work out! And I have to agree with your thoughts on disturbing the culinary universe… I just happen to think that ALL rice pudding does that! haha!
Well you just saved me hours of heartache. A client has requested rice pudding for a “Home is Where the Heart” is goodbye party for her sister and brother in law who are moving overseas and she is allergic to dairy. I was going to use almond milk to give it a try but now I don’t have to! Thanks so much for guinea pigging this.
I just couldn’t get enthused about the chocolate version, even though I love chocolate. Photos of the chocolate version support my case. The fruit one was actually decent, but I think I prefer tapioca. Maybe soy milk or rice milk (ha) would work for you.
Looks regal and elegant!
I almost didn’t take a pick of mine as well! Sorry yours didn’t work out either!
sorry it didn’t work for you, but at least you tried
[…] of you may remember that I had no luck when I made the arborio rice pudding, but that was not the case this time. Both Master Chow and I have milk allergies (his is a lot […]
